As I was a full non-vegetarian, it was so difficult for me to say NO to meat and be consistent on plant-based food. In the initial days, I had a lot of cravings for something spicy and savoury to satisfy my taste buds. Then, I started experimenting with plant-based foods and other vegan products to create something delicious. Today I am sharing the recipe of my favourite vegan snacks that I usually make whenever I feel a bit hungry or want to eat something flavourful. If you are dealing with the same grind, this might help you.
Peanut Butter Banana Bites
Whenever my kids need something fulfilling and I have fewer options to pack something in their lunch. Peanut butter Banana bites are my go-to lunch for them. Just two main ingredients, and it is ready to satisfy your appetites.

Take a half dozen bananas, 50-100 g of peanut butter, 20-50 g of maple syrup or honey, and cinnamon powder. Peel off the bananas and cut them into thick slices. Make 4-5 slices and apply the peanut butter on the banana slices, and make a sandwich. Sprinkle some cinnamon powder on it. Put the banana sandwiches in the freezer for 10-15 minutes to get them slightly hard. Add the honey over it. This is completely your choice; if you prefer less sugar and want to keep it healthy, skip maple or honey. Pack it for lunch or enjoy it when it is your movie time with family.
Chickpeas Salad with Tofu
If your kids do not love to eat vegetables and avoid fresh vegan food, and you are worried about their nutritional health. This salad can be a boon for you. You can add as many vegetables as you want, raw or half-cooked, to keep it crunchy. I have tried this trick with my family and kids; they eat it happily and don’t know about the vegetables I have added. The first thing you need to do is boil some chickpeas and add some salt while boiling so that they cook faster.

Chop some vegetables like capsicum, cucumber, onion, tomato, carrot, radish, or any other vegetable you want. Add some baby corn to impress your kiddos. Toss all the vegetables and keep them half-cooked or keep them raw if you like.
Take a bowl, and put all the chopped vegetables and boiled chickpeas in it. Add some spices like salt and black pepper. Top it with some tofu, squeeze a lemon over it, and garnish with coriander. The fancy restaurant salad is ready.
Avocado Toast Crackers
You will need a ripe avocado, whole-grain or rice crackers, and some spices. Mash the ripened avocado properly and make a smooth paste. Apply the avocado paste on rice crackers, add some salt, chilli flakes, and pepper, and squeeze lemon over it. Your quick snack is ready. Sometimes, when you don’t have time to prepare or cook something, avocado toast crackers can be a great option.
